Simple Chimmichurri Sauce

This is one of my favorite sauce recipes EVER! It’s amazing with beef, fish, chicken or meatballs of any type. The hardest part for me is chopping the parsley but that’s because I don’t like stems. It’s super simple to make.

Here goes…

  • 1 bunch flat parsley
  • 1 bunch cilantro
  • 1/2 cup red onion (chopped)
  • 1/2 cup EVOO (quality)
  • Red pepper flakes (to taste)
  • Salt (to taste)
  • Black pepper (to taste)
  • 3 tbsp oregano
  • 3 tbsp red wine vinegar
  • 2 tbsp of lemon juice
  • 3 tbsp minced garlic

Blend all ingredients except EVOO. Then stir in EVOO til well mixed. Serve. Store in refrigerator but allow to get room temperature before serving. The below version pictured has less oil.

Shredded Chicken Made Easy

I love shredded chicken for the ease, versatility and taste of it.

This recipe is easy:

Bring a boiler of water to a boil and reduce to medium. Placed thawd, uncooked chicken breast in water for 30 mins. Shred with a simple mixer (shown).

This simple recipe allows you to adapt the chicken in many different ways during the week to eliminate boredom. My favorites are: chicken soft tacos, pesto chicken, curry chicken and as a topping on something like a pizza. Eat with something like rice or soba noodles. Enjoy!!!

Turmeric Root Golden Paste

Los Angeles, CA | Downtown

I’m starting to get hooked on finding ways to consume this wonder root. Today I read up on and made turmeric root golden paste for me and my dogs (they LOVE it). First of all my dogs eat as good as I do. I don’t think I would feed them anything that isn’t also good for me to eat with the exception of good quality kibble. I’ll leave that to them. Its easy to make and has amazing benefits.

I sent the article I read to a grade school bestie of mine that has brain cancer for their consideration. A lot of times when people are in the acute stages of a disease they tend opt for the Western conventional “sure fire” means of treatment because they feel that its better at that point. I totally understand the logic and would probably go the same route in an acute circumstance or situation based on the way our minds is conditioned in a situation as this. I don’t know the particulars so I respect whatever decision is made on behalf of the person in it.

Ingredients:

  • 1/2 cup of organic turmeric  powder
  • 1 cup water or a bit more/less to make desired consistency
  • 1 teaspoons ground black pepper or 1/2 tsp. if pepper is too strong)
  • 1/4 cup cold pressed Olive or un-refined Coconut oil – enhances the bio-availability of curcumin another seven to eight-fold*

*Note: When eaten with fat (virgin olive or coconut oil or even meat drippings) like in India, curcumin can be directly absorbed into the bloodstream through the lymphatic system partially bypassing the liver.

Directions:

  1. add turmeric to water in a pan. Slowly heat while stirring til you get a thick paste, approx 6 – 10 min. Adjust thickness by adding some water or a bit more turmeric.
  2. add the pepper and oil. Be sure to add liquefied oil very slowly so that separation doesn’t occur. Continue stirring to ensure all ingredients are mixed. Cool.
  3. store in clean jar with tight-fitting lid and refrigerate up to 2 wks, max. (Note: anti-microbial UN-refined, virgin coconut oil will help keep it from spoiling sooner).

Take a look at this in-depth article that includes the many uses of this wonderful golden paste. I’ve listed a few of my faves below:

  • alone, one (non-heaping) teaspoon – that’s it – done
  • turmeric honey
  • add to warm or cold milk
  • add to hot soups, smoothies, teas, rice and meat dishes

The Wonder of TURMERIC!

img_9327

Los Angeles, CA | Downtown

Happy Sunday afternoon – What a great day for such a beautiful drink. The color is so rich. I’m so happy to be taking control of my pain and the inflammation in my body by drinking this amazing elixir two days in a row now.

What a wonderful way to start the day pain free! Discover the many benefits of turmeric. I whipped up this tonic after reading of the many benefits of this amazing drink made with nothing but whole ingredients.

I read of the many benefits and was inspired to make this version of the tonic based on an article I read on tumeric for health. There are many other variations of it or feel free to make your own. Hopefully this will inspire you to reap the many benefits of this natural spice by ingesting it as a tea or tonic. I hesitate to call it a tea because teas are generally, green black and oolong and variations off of those.

I started with the following:

  • 4 cups of water
  • 2 teaspoons of organic turmeric powder
  • a pinch of organic ginger powder
  • a drop of therapeutic grade clove doterra essential oil
  • a couple of drops of therapeutic grade cinnamon doterra essential oil

Bring the water to a boil then add the other ingredients, let simmer for 10 mins and enjoy hot or cold. Try it and let me know what you think.

Turmeric has antioxidant properties and helps with:

  • anti-inflammatory treatment (my main reason for using)
  • pain relief (my main reason for using)
  • cancer treatment and prevention
  • cataract prevention
  • reduces the risk of catching atherosclerosis by preventing blood clots
  • helps people with diabetes and viral infections
